Mushroom quiche with Santa Helena Chardonnay

A savoury quiche filled with creamy mushrooms sautéed in butter with fine herbs. A simple but immensely tasty meal that will surprise you with its texture and flavour. When paired with our silky Chardonnay, it creates a velvety and very pleasant sensation in the mouth.

Ingredients

1 cup of flour
1 egg yolk
100 g of butter
Salt (a pinch)
1 cup of cream
2 eggs
2 tablespoons of grated Parmesan cheese
2 cups of sautéed mushrooms

To prepare the dough, shape the flour into a volcano and add the yolk, butter, and salt in the center.

Mix with a fork and then with your hands until you get a uniform dough. If it’s too dry, add a little water. Roll out the dough with a rolling pin until it’s 1/2 cm thick, place it in a buttered mold, and pre-bake it in the oven at 180°C for 10 to 15 minutes. Set aside.

For the filling, lightly beat the cream with the eggs in a bowl until combined. Add the grated Parmesan cheese and sautéed mushrooms, mix well, and pour it over the pre-baked dough. Return to the oven at 180°C for 20 minutes or until the filling is firm and golden. You can serve it warm or at room temperature.
